Also known as Sajuk Tup, cultured ghee is another form of ghee that is produced by hand-churning the curd into butter, thus producing high-quality ghee.

Where to use cultured ghee?

Cultured ghee can be used in a variety of Indian recipes. But, here’s one of our favourites:

Sajuk Tup Besan Ladoo

Laddoos are one of the favourite Indian mithai. What makes laddoos everyone's favourite sweet are the ingredients that go into the making of these delicious laddoos. One such main ingredient is ghee. The richness in laddoos comes from the ghee. Adding ghee to ladoos makes it so tempting.

With Mandeshi Agro’s Sajuk Tup, you may not just gulp 3-4 laddoos but even 7-8. And, no worries about the fats, our ghee is prepared in such a way that it will not affect your health negatively.

Besan, also known as gram flour, is commonly used in a variety of dishes, from frying bhajiyas to theplas and other snacks. But, besan laddoos remain our favourite. Here's how you can easily make healthy and delicious besan laddoos with our cultured ghee.

Ingredients:

1) 1 cup Besan
2) ½ cup Mandeshi Agro's jaggery powder
3) ¼ cup Mandeshi Agro's Cultured Ghee
4) 3 Cardamoms
5) Crushed Dry fruits

Recipe:

1) Take ½ cup Mandesi Agro’s organic jaggery powder and a few cardamoms and use a blender to grind them into fine powder.
2) Heat 1 ½ teaspoons of Mandesi Agro’s Cultured Ghee ghee in a pan. Add some dry fruits and roast them on a medium flame. Remove the dry fruits into a bowl. Adding dry fruits is optional though.
3) Add besan to the same pan and lower the flame. Do not add extra ghee at this point, or the besan would be difficult to fry.
4) Mix the ghee and besan. Turn to medium flame and stir the besan continuously so that it does not burn.
5) Make sure you break down any lumps in the mixture while stirring. After a while, the colour of besan will change slightly and will have an enticing aroma.
6) Now, turn the flame to low and add the rest of the ghee to the pan. Do not stop stirring! The besan will slowly absorb the ghee.
7) Keep stirring till the besan becomes smooth and has no lumps. Your besan should turn golden yellow.
8) Turn off the flame when the kitchen is filled with the aroma of the mixture. Now, allow the mixture to cool down completely.
9) Add roasted dry fruits and powdered sugar and cardamom mixture. Knead it with your hands to mix it well. Let the besan cool down completely before adding the sugar. If you don’t, then the sugar will melt and make the mixture loose and the laddoos won’t bind together.
10) Apply a little ghee to your palms to mould the mixture into the shape of laddoos. Your Besan Laddoos are ready!

Remember:

Choosing the finest ingredients is very important. Good quality besan and pure ghee will help to enhance the flavour and make smooth laddus. Roast the besan properly and do not rush it or it will taste raw. Do not overcook or it will burn.
