Ukadiche Modak

Ganesh Chaturthi is one of the most widely celebrated festivals in the western parts of India. And the first that comes to our heads when we hear the word Ganesh Chaturthi is Modak. It is said to be Ganesha’s favorite sweet and is made in every Hindu home as an offering to Lord Ganesha.

Nowadays, with people experimenting with food, we find a lot of varieties of modaks. From chocolate modaks to dry fruit modaks and also fried modaks, we get to see numerous flavours and types of modaks. Preparing modaks does require patience and effort.

However, the classic Ukadiche Modak has been our favourite of all times. So, now that Ganesh Chaturthi is around the corner, let’s prepare some healthy organic Ukadiche Modaks?

Ukadiche Modak Recipe

As we mentioned earlier, many types of modak stuffing are found these days. But there is nothing compared to the original coconut stuffing made in ghee in jaggery. Ingredients:

1) 1 cup Mandeshi Agro’s Danedar cow Ghee
2) 1 cup Grated Coconut
3)1 cup Mandeshi Agro's jaggery powder
4) ½ teaspoon poppy seed
5) ¼ teaspoon grated nutmeg
6)1 teaspoon cardamom powder
7)1 cup of rice flour Some chopped dry fruits

Part 1: Preparing the stuffing.

1)Take 100 gm Mandeshi Agro’s Danedar Ghee in a pan and heat it on a low flame. Add ½ teaspoon poppy seeds (khus khus). Fry for some seconds till the poppy seeds start crackling.
2) Add 1 cup of freshly grated coconut to the pan.
3) Next, take about 1 cup of Mandeshi Agro’s jaggery powder, add it to the pan, and stir well. Add ¼ teaspoon grated nutmeg and 1 teaspoon cardamom powder in between.
4)Cook this mixture on a low flame for about 8-10 mins. Don’t overcook the coconut- jaggery stuffing as the mixture will start to harden.
5) Add chopped dry fruits as per your choice (optional). In order to absorb moisture, add about 1 tb spoon of rice flour and set it aside.

Part 2: Making the rice dough.

1) In a pan take about 2 cups of water, 1 teaspoon of Mandeshi Agro’s Danedar Ghee, and ¼ teaspoon of salt. Let this mixture come to a boil.
2) Add 1 cup of fresh rice flour (about 150 grams) to the pan. Quickly stir and mix the rice flour with the water.
3) Stir till all the rice flour is mixed with the water. Switch off the flame and cover the pan with a lid for 4 to 5 minutes.
4) Now take out the dough mixture and knead it. If you feel the dough looks dense, hard, or dry, add a few teaspoons of warm water and continue to knead.
5) Knead to a smooth and soft dough without any lumps. Make small balls from the dough. Roll the balls till smooth in your palms. You can also apply some water to your palms while rolling the balls.
6) Keep the balls covered with a kitchen towel. Make sure the balls do not have any cracks and are smooth in appearance.

Part 3: Making the Modaks

Shaping the modaks is a skillful task. As a beginner, it might seem a little difficult. In such cases, you can apply Mandeshi Agro’s Danedar Ghee on your palms and flatten the balls.

1) Take a ball and flatten it with your fingers or on your palms, making a circle or a bowl-like shape with slightly thin edges and a thick center.
2) Take the required quantity of coconut and jaggery stuffing and place it in the center of the flattened dough.
3) Now, carefully press the edges towards the inside and join them making it in the shape of a modak.

4) You can remove the extra portion of the dough from the top, if any, and shape the modak. You can also use ready-modak moulds that are readily available in the markets.

Part 4: Steaming the Modaks.

1) Take about 2-3 cups of water in a pressure cooker or any steaming container that is available. Place a rack or something to place the modaks on, in the container.
2) When the water starts boiling, place the modaks on the rack and cover it with a moist cotton cloth. Steam the modaks for about 15 minutes on medium-low flame.
3) Once the modaks are steamed, you can drizzle a few teaspoons of ghee on them.

Your ukadiche modaks are now ready to be offered to Lord Ganesha!
